Thai Peanut-Lime Salad


Ingredients:

Dressing:

  • 1/3 cup peanut butter
  • juice of 1 lime
  • 4 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 3 tbsp sweet chili sauce
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2-3 tbsp honey
  • 1 tsp red pepper flakes
  • a splash of sesame oil
  • a few tbsp warm water

 Salad:

  • 1/2 head green cabbage, shredded
  • 1/2 head purple cabbage, shredded
  • 1/2 english cucumber, diced
  • 1 cup shredded carrot
  • 1/2 cup green onion
  • 1/4 cup edamame beans
  • a handful of wonton strips and slivered almonds
  • a big pinch of fresh chopped cilantro

Mix dressing together, then toss into salad. Serve topped with grilled chicken or shrimp and enjoy!
