- 4 pieces salmon
- 1/4 cup sweet chili sauce
- 1 1/2 tbsp apricot jam
- 3 tbsp soy sauce
- 1 clove garlic, minced
- salt and pepper
Combine sweet chili, apricot jam, and soy sauce. Season salmon with salt and pepper, and cover with sauce, reserving 1/4 cup for later use. Marinate for at least one hour.
Set broiler to high with rack about 6 inches from the top. Line a baking sheet with aluminum foil, and spray with cooking spray. Take salmon out of marinade and place on foiled baking sheet. Broil for 6-10 minutes, until golden brown. Plate the salmon and pour the leftover glaze mixture over.
