Pineapple Upside-down Pancakes


*Syrup recipe is for 3 pancakes.

Ingredients:

  • pancake mix
  • butter
  • pineapple slices
  • maraschino cherries
  • shredded sweetened coconut
  • 1/3 cup pineapple juice
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp maple syrup

In a small sauce pan on medium heat, melt 1 tablespoon of butter. Add brown sugar, pineapple juice, cinnamon, and maple syrup. When combined, turn heat to high, and keep at a boil for about 3-4 minutes. Reduce heat to a simmer and let thicken slightly. you want it to be the consistency of regular maple syrup. 

Mix pancake batter according to directions. Melt a little butter in a separate pan over medium heat. Add pineapple slice and cherry in the middle. Pour batter over pineapple and cherry. Add shredded coconut to the bottom of the pancake, and cook until ready to flip. Be careful when flipping, because the batter will naturally want to separate from the pineapple while the pancake is still half raw. 

Cook pancakes thoroughly, then take off heat and serve with syrup!
