Oatmeal Cookies with Cranberry & Pecans


Makes about 24 cookies.

Ingredients:

  • 1 cup butter-flavored Crisco (the kind that is butter consistency, not the kind that looks like vegetable oil)
  • 1 cup sugar
  • 1 cup brown sugar
  • 3 tsp vanilla
  • 2 eggs
  • 1 1/2 cup flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 cups oatmeal
  • 1 cup chopped pecans
  • 1/2 cup dried cranberries

Set oven to 350 degrees. Cream together Crisco, both sugars, eggs, & vanilla until well combined. In a separate bowl, mix the flour, salt, & baking soda.

Mix that into wet ingredients, then fold in the oats, nuts, & cranberries until fully combined. 

Roll into balls & place about 2 inches apart on a lined baking sheet. Bake for 11 minutes, then let sit outside of oven & continue to bake until cool enough to eat!
