Ingredients:
- 2 stalks Romaine lettuce, chopped
- 1 Roma tomato, diced
- 1/2 cup fresh mozzarella, diced
- 1/2 English cucumber, diced
- 1/3 cup salami or pepperoni,chopped
- 1/4 cup grated fresh Parmesan
- 1/2 can garbanzo beans, drained and rinsed
- 1/4 cup pepperoncini or banana peppers, chopped
- 1/2 of a lemon (for squeezing over salad)
- fresh cracked black pepper
For the dressing:
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dijon mustard
- 1 clove garlic, minced
- pinch of Italian seasoning
- pinch of fresh cracked black pepper
Whisk dressing ingredients together. To a large bowl, add all salad ingredients and toss with dressing. Save a little Parmesan to top the salad with!
