Italian Chopped Salad

Ingredients:

  • 2 stalks Romaine lettuce, chopped
  • 1 Roma tomato, diced
  • 1/2 cup fresh mozzarella, diced
  • 1/2 English cucumber, diced
  • 1/3 cup salami or pepperoni,chopped
  • 1/4 cup grated fresh Parmesan
  • 1/2 can garbanzo beans, drained and rinsed
  • 1/4 cup pepperoncini or banana peppers, chopped
  • 1/2 of a lemon (for squeezing over salad)
  • fresh cracked black pepper

For the dressing:

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1 clove garlic, minced
  • pinch of Italian seasoning
  • pinch of fresh cracked black pepper

Whisk dressing ingredients together. To a large bowl, add all salad ingredients and toss with dressing. Save a little Parmesan to top the salad with!
