Lemon Pepper Cauliflower Rice

Serves 2-3 people


  • 10oz bag frozen riced cauliflower
  • 1 small shallot, diced
  • 1-2 cloves garlic, minced
  • 1 tsp lemon pepper seasoning
  • juice of 1 small lemon
  • salt and pepper

Drizzle a little olive oil to a pan on medium heat. Add the shallot and cook 2-3 minutes, then add in the frozen cauliflower rice. Cook until the onions are translucent and the cauliflower is warmed through. Add the minced garlic and cook until fragrant, 1-2 minutes. 

Squeeze the lemon over the rice, making sure to pick out any seeds. Add lemon pepper seasoning. Let cook for another 1-2 minutes or until the mixture is slightly golden. Add salt and pepper to taste.
