This recipe doesn’t call for any alcohol. The name comes from my dad (pre-marriage) making these for his friends after a night out!
- 3 large russet potatoes, cut into chunks
- 1 medium yellow onion, diced
- cajun seasoning
- 2 cups water
- 2 tbsp olive oil
Heat olive oil in a pot on medium heat. Add onion and cook until translucent. Add potatoes and cook until brown on all sides. Then add water, cover, and cook on medium heat until all of the water is absorbed and the potatoes are very soft.
