Creamy Cucumber Salad


  • 2-3 large English cucumbers, chopped to bite size pieces
  • 1/2 red onion, sliced thinly
  • 1/4 cup olive oil
  • 1 1/2 tsp red wine vinegar
  • 1 1/2 tsp dried oregano
  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1-2 cloves garlic, finely minced
  • 1/4 cup fresh chopped dill
  • 1 tsp salt
  • pepper to taste

Combine the red onion, red wine vinegar, olive oil, and oregano in a bowl and set aside to marinate.

Mix the Greek yogurt, lemon juice, garlic, dill, salt, and pepper to taste. Toss the cucumbers in sauce. Lastly, add the marinated onions and mix well. Serve immediately or refrigerate for up to 30 minutes.
