Ingredients:
- 1 lb peeled & deveined shrimp
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 1/4 cup olive oil
- 2 limes, 1 juiced, and 1 cut into wedges for serving
- 2 cloves minced garlic
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp red pepper flakes
- 1 tsp salt
- 1/2 tsp black pepper
- romaine lettuce stalks, for serving
- cilantro, chopped for topping
For the crema:
- 2 jalapenos
- 1 tbsp vegetable oil
- 1 avocado
- 6 tbsp pineapple juice
- 1/4 cup sour cream
- 1/4 tsp salt
Blend all crema ingredients in a blender or food processor and set aside.
Set oven to 450 degrees. Mix all other ingredients (besides lettuce and cilantro) and toss on a baking sheet. Bake for 8 minutes, then remove from oven, take the shrimp off of the pan, and bake veggies for another 10 minutes.
Assemble wraps with veggies and shrimp, then top with crema and cilantro. Serve with a lime wedge for squeezing.
