I made this sandwich for a week straight when I was quarantined with my family during lockdown. This caprese grilled cheese packs so much flavor and is a great vegetarian lunch!
- sliced white bread
- fresh mozzarella, sliced
- pesto (you can make your own, but I use Rana brand found in the refrigerated section of most grocery stores)
- roma tomato, sliced
- 1 tbsp butter
- cooked bacon slices (optional)
Smear a good spoonful of pesto onto one slice of bread, and layer with mozzarella, tomato, bacon (if desired) and top with another slice of bread.
Melt butter in pan on medium heat, place sandwich in pan and cook until golden and crispy. Serve immediately.
