Cajun Shrimp & Rice

Cajun Shrimp

  • 1 lb Raw Shrimp peeled and deveined
  • 1 tsp olive oil
  • 1/2 packet Cajun Shrimp seasoning

if you don’t have access to a Cajun Shrimp seasoning packet, use this:

  • 1 1/2 tbsp Cajun Seasoning
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika
  • 1/4 tsp Salt more or less to taste
  • 1/4 tsp Black Pepper

Cajun Rice

  • 2 cups long grain rice
  • 2 tbsp butter
  • 2 small shallots, riced
  • 4 cloves garlic minced
  • 2 3/4 cup chicken broth
  • 2 tbsp Green Onions thinly sliced for garnish
  • other 1/2 of the Cajun Shrimp seasoning packet

  • 1 tbsp Cajun Seasoning
  • 1 tsp Italian Seasoning

Season shrimp with 1/2 the Cajun seasoning packet or other seasonings. Set aside for at least 15 minutes.

Heat 1 tbsp butter in a skillet or deep pan over medium high heat. Add shrimp and sauté until cooked, about 2-5 minutes, flipping halfway. Remove and transfer to a plate.

Melt butter in skillet then add onions, sauté for 2-3 minutes then add garlic and continue to sauté until fragrant and softened. Stir in chicken broth and rice. Season with Cajun seasoning packet (or other options). Increase heat to high and bring mixture to a boil, then lower to a simmer and cover. Let simmer for 15 minutes until rice is soft and fluffy. Turn off heat and allow to rest for 10 minutes, stir in shrimp, garnish with green onions and enjoy!
