Blueberry Banana Bread


  • 2 cups all-purpose flour + 1 tbsp to coat the blueberries
  • 1 cup sugar
  • 1/4 cup butter, softened
  • 2 eggs
  • 1/3 cup vanilla or plain yogurt
  • 1/2 tsp salt
  • 3/4 tsp baking soda
  • 1 cup mashed ripe banana
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh blueberries

Set oven to 350 degrees. In a medium bowl, mix the 2 cups of flour, salt, & baking soda.

In a separate bowl, cream together the sugar and butter until fluffy and well blended.

To the wet mixture, add mashed banana, eggs, yogurt, and vanilla, and blend well.

Next, add the flour mixture and gently mixture until just moist.

Place the blueberries in a bowl with 1 tablespoon flour and toss to coat.

Gently fold blueberries into batter, then pour batter into a greased loaf pan. You can add additional blueberries to the top of the batter for decoration.

Bake for 60-70 minutes until center is firm. Then, cool the bread for 10 minutes in pan before removing.
