Artichoke Garlic Toast


  • 13 oz can artichoke hearts, drained
  • 3 tbsp mayo
  • 1 garlic clove
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped
  • 2 tbsp freshly grated Parmesan cheese
  • 2 tbsp chopped prosciutto or ham
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • toasted garlic bread, sliced

Combine all ingredients except bread in a food processor and blend until smooth. Spread onto garlic toast and serve. You can also serve these hot topping the artichoke spread on the toasts with a sprinkle of cheese and broiling them for a few minutes until the cheese is melted.
